Yikes, where did the time go?

Wow, it's been almost two months since I've blogged!  I hope the new year has been happy for you so far.  We're awaiting a blizzard and hoping we don't lose power.  If you're in the path of the storm, please be safe!

Does winter have you craving comfort food?  Here's a recipe for (relatively) healthy brownies that will chase away the winter blues while not totally derailing your diet!


Healthified Brownies

Preheat oven to 350° 

Sift together: 

1 cup white whole wheat flour
½ cup powdered cocoa
¼ tsp salt
¼ tsp baking powder

Cream together:

1 1/4 cup sugar
3 3/4 TBSP olive oil

Add to sugar and oil:

2/3 cup unsweetened applesauce
1 tsp vanilla
1 tsp instant coffee dissolved in 1 tsp hot water

Combine with dry ingredients, stirring until just moistened. Bake in a greased 8 x 8" pan for 40 minutes.
