Burger and Hot Dog Creativity, Mid-Century Style

Burgers and hot dogs are summer traditions for a reason, but what if you're feeling creative and want to try something different? Here are some ideas you probably hadn't thought of for summer entertaining (or entertaining during any other season, for that matter). These appetizers all feature hot dogs. Have you ever minced hot dogs before? Get ready to mince and grind! Frankly (you should pardon the expression), I want to pass a tray of these appetizers at a party so that I can say "Chunkette?" and watch the reactions!

For the main course we move on to ground beef, which 1967's Ground Beef Cookbook calls "one of the most 'talented' of meats," (sic), with a couple of meat loaf recipes that promise to be real conversation starters! You don't have to use beef for these recipes - I won't tell! First up: Unusual Ground Beef Loaf, courtesy of Mrs. Fred Merk of Drain, Oregon:


Not to be outdone, Mrs. Herbert Laroche, of Domremy, Saskatchewan, Canada, offers us her Piquant Meat Loaf, complete with Piquant Sauce:


I'm positive these ladies had first names, but, alas, we'll never know them. One day I will serve Unusual Ground Beef Loaf so that I can answer "Unusual Ground Beef Loaf" when asked what we're having for supper. By the way, you're invited for supper!

Tips For The Harried Hostess (or Host)

Have you thought of throwing a cocktail party, but then said "Eh, too much work," and canned the idea? Well, the time to entertain has come! Find a copy of Good Housekeeping's Appetizer Book (1958, The Hearst Corporation and, yes, those are appetizers sticking out of a candle on the cover), because it has ideas so easy you never even need to turn on a burner, much less the oven!

No serving platter? No problem! Stick your appetizers in a lit candle! It's food AND mood lighting!

(Practically) everyone loves a seafood cocktail! Go bohemian and serve it in the living room! These sauces are all pretty darned quick and easy, but for the truly time pressed, see the final suggestion.


Here's another eccentric serving suggestion for your seafood cocktail - spear shrimp and arrange whimsically around a basket!



For the seafood-abstainers on your guest list, here's an intriguing appetizer from the "slimming" section of the book. I'd never equated canned meat with dieting before.

Crackerquariums!

The next time you're looking for an effortless appetizer that is nevertheless impressive looking, make Crackerquariums! All you do is combine cream cheese with your favorite spices (or use any premade white spread), add blue food color, spread on crackers, top with a goldfish cracker and coral and seagrass made from pimentos, yellow banana peppers and spinach leaves. They couldn't be easier to prepare and they're a real conversation starter!

Corn And Black Beans: Is There Anything You Can't Do?

In much the same way that roasting a chicken and using it in dishes all week is a great way to save time and money, this easy combination of corn and black beans can serve as a base for dishes to last for days! All you do is combine one can of rinsed black beans and an equal amount of corn (I used frozen). Toss in some minced onion and salt, along with the juice of half a lime, and in about 30 seconds you're done!

This combination made its first appearance this week in an easy appetizer that is always popular at parties. Add a little spoonful each to Tostitos Scoops chips, top with hot sauce or salsa if you like. That's it! So simple and they disappear quickly!

Other uses for this magical mixture: combine with chicken or veggie broth (and a little beer or tequila if you're feeling frisky) and add a few tortilla chips for a delicious soup, add to your favorite chili recipe, tacos or melt with cheese in quesadillas, mix with eggs and milk for a fabulous frittata, toss with some olive oil and garlic and serve with pasta, blend with cream cheese or mashed avocado and spices for a yummy sandwich spread - the options are endless! Best of all, you'd be hard pressed to find a less expensive meal option. Pick up some corn and black beans the next time you're at the supermarket and don't worry about meals for a few days - you've got it covered!
